It’s finally time! Time for me to unleash this new, delicious, vegan, gluten-free recipe.
I give you: Vegan 7-Layer Mexican Dip!!! Are you excited? I know I am – whoa!!! All the exclamation marks!!! 😉
This incredible Vegan 7-Layer Mexican Dip is totally where its at. It is full-on party time in a bowl. Your mouth will need a curfew extension for all the goodness that is going on in this recipe.
This recipe builds on some of the saucy staples I shared with you earlier this week: The Best Damn Vegan Sour Cream and Vegan Nacho Cheese Sauce. Its absolutely perfect for your Cinco de Mayo party in a few short days!

I mean, really, check out these layers! Pico de Gallo, Black Beans, Corn, Guacamole, Vegan Sour Cream, Vegan Nacho Cheese Sauce and fresh, crisp lettuce. Oh, Baby!

I’m so happy to have been able to build up to a fantastic recipe like this – I know that all 7 glorious layers of this magnificent dip will be gobbled up in no time at your house.
This recipe is really simple to pull together. To make your very own Vegan 7-Layer Mexican Dip, you basically assemble each layer over top of each other in a medium bowl of trifle dish. Start with your pico de gallo (or salsa, if you prefer), then layer the black bean mash over top (or refried beans, if you prefer), followed by corn, guacamole, vegan sour cream, vegan nacho cheese sauce, chopped lettuce and some diced bell peppers for garnish. Pure perfection!
So far, Cinco de Mayo has been my favourite holiday to build recipes up for. I have had an absolute blast dreaming up all these yummy Mexican inspired dishes and I hope that you’ve had as much fun trying out these recipes for yourself. I plan on doing a fun round up of all my Mexican themed dishes to celebrate on the day of for Cinco de Mayo. It will have all sorts of spicy, delicious Mexican flavour to it, scout’s honour.

- 2 cups pico de gallo or salsa
- 1 can black beans, drained and mashed
- 2 cups frozen corn
- 1½ cups guacamole
- 1½ cups Best Damn Vegan Sour Cream
- 1½ cups Vegan Nacho Cheese Sauce
- 2 cups chopped boston lettuce or other lettuce of choice
- ½ cup diced bell peppers for garnish
- In a medium serving bowl or trifle dish, layer each ingredient in the order listed above, being careful not to mix the ingredients as you add each new one to the serving bowl.
- Serve immediately with your favourite nacho, chips or cracker, or store in refrigerator and enjoy the next day.

We just use generic store brands from our grocer and we’ve never had any issues with them. I know some brands (mccormacks I believe) may explicitly state that they are gluten free? Keep checking labels until you find one you like.

Thanks, Arman! Believe it or not, I actually didn’t have any of this 🙁 My husband took it to his work where it was promptly devoured by his more than willing coworkers! All reports were more than positive and most of the guys didn’t even realize it was vegan!! That’s always my sign of a recipe well done 🙂
