Now, I get that this isn’t actually a real meal, but sneaking a spoonful of this liquid gold from time to time is a definite pick me up. So lets get some of this simple recipe into your lives – your energy levels can thank me later! 🙂
Making this Salted Vanilla Date Caramel is incredibly easy. There is absolutely no prep required, only 4 ingredients and all you need is a blender. Ta-da! Salted Vanilla Date Caramel!
As the name suggests, this caramel is made out of dates so it’s also 100% refined sugar free. It’s also fat free – whoop, whoop! The end result is creamy, sweet with a touch of salty, rich, decadent and pure indulgence.
It’s awesome for sweetening up your morning oatmeal, pouring over some vegan yogurt or creating the best vegan banana split of life! Basically, you can add this delicious Salted Vanilla Date Caramel to anything your heart desires. It’s the perfect topping!

I also just wanted to take a minute to apologize with my regular blogging schedule. I usually post on Sundays, Wednesdays and Fridays, but last week was just pure chaos around here. My husband, Salar, has been super busy with his Masters program, we’ve been squeezing in some home renovation projects (we installed our own garage door!) and I’ve been feeling a little under the weather with some health issues. So sorry for the little gap you may have noticed; I promise to try and keep up with my consistency so that you have all sorts of great recipes to continue pouring over.

- 1 cup Medjool dates, pitted
- 1 cup water
- ½ tsp sea salt
- 1½ tsp vanilla extract
- Place all ingredients in your blender (I used my Vitamix)
- Blend on high for 3-5 minutes, until smooth and creamy.
- Use to top your favourite desserts, oatmeals and ice creams. Can also be used in any recipes that call for caramel sauce.
I was on the lookout for a caramel recipe that didn’t contain brown sugar, cream, or coconut milk and this sounds yummy. I’m drooling right now and can’t wait to buy a sack of dates and whip up some for my dairy-free avocado “ice cream” or French toast or pancakes.
I want to drizzle this on anything and everything and I’d also like to just rub it all over my face because omg it sounds so perfect.

Dates are my secret ingredient. I love that this is vegan. My husband can’t do dairy, and so it is always a win to find a really great vegan recipe. Pinning it now!
